Ice cream entrepreneur Charlie Francis has created theUK’s first portable nitro ice cream parlour. The ice cream contraption uses a liquid nitrogen injection system to churn two custom flavours for up to 500 guests fresh in front of their eyes. The machine is set up in half an hour by ninja ice cream warriors and makes fresh ice cream in under a minute.
Charlie says “I grew up on an ice cream farm inSouth Wales, my father is an ice cream maker and my mother is a fantastic baker. I wanted a way of combining these two skills to create delicious frozen creations, mixing ice cream with home made tasty confectionary bakery goodness and churning the whole thing with liquid nitrogen. So the ice cream contraption was born”
Charlie’s business, Lick Me I’m Delicious, was the South West Winner of Barclays Take One Small Step award earlier this year. Since then he’s spent his time building his ice cream contraption and creating flavours in his new development kitchen.
“I like to create frozen creations, tasty deliciousness which are more dessert than ice cream. I’ve created a dark port ice cream with a stilton ripple, which I serve on a crisp thin water biscuit, a lemon meringue pie served in an all butter pasty case and a raspberry mojito ice cream using real raspberries, fresh mint and lots of white rum.”
He calls his contraption Thunderbird 1 and has plans for an army of ice cream contraptions. Thunderbird 2 is rumoured to be an ice cream buggy and there’s talk of an ice cream boat being developed.

When growing up, many may envisage their fairy-tale wedding. The long flowing white dress, a beautiful bouquet of flowers, friends and family sharing the day and a stunning traditional church providing the backdrop of the photos as the sun shines. Unfortunately, with the weather forever changing in the UK you can never be certain what your wedding day will turn out like, which is why more couples are swapping the windy shores of England for the warmer climates of Spain, Barbados and further afield.

Couples seeking an alternative to the traditional hotel wedding celebration can now capture the fun and romance of the beach thanks to a Sussex boutique hotel.
The Gallivant at Camber in East Sussex combines California-style driftwood decor with beachside fun thanks to its position on the magnificent dunes of Camber Sands, one of the UK’s largest and most beautiful sandy beaches. Couples can make their marriage vows in one of the hotel’s stylish indoor spaces, in a beautiful local church or even a lighthouse before starting their celebrations with a unique reception in the sand dunes. A Londonbus is on hand to take guests to and from the church or town hall.
Unique to the Gallivant is their take on the pre wedding-breakfast reception. Each guest is handed a Gallivant beach bag which includes a three layer picnic tiffin of canapes and a flip top bottle of Seabreeze cocktail, and they are then escorted the short walk up and over the sand dunes. There they have set up wind breaks, deck chairs and rugs where guests are invited to an altogether different kind of drinks reception. The dunes opposite the hotel are protected and provide a lovely environment for a relaxed drinks reception and informal photos. The beach itself at Camber is large and gently sloping so it is ideal for family parties and for the happy couple to have an impromptu paddle.
